BBQ Jackfruit Blues

One of my favorite, go-to, (I mean ridiculously easy), vegan recipes (especially when I am feeding large groups or carnivores) is BBQ Jackfruit. If you are short on time, watching your pockets, or just not too kitchen savvy, this one is for you. If you'd like to get brave and take on a fresh Jackfruit I will have a blog/vlog about that another day when I'm not crunched on time haha. Here's the recipe. BBQ Jackfruit BLueswich

(serves 4)

1 can young (green) Jackfruit 

1/4-2 C. of your favorite bbq sauce *("Rufus Teague: Honey Sweet")

8 slices of bread or 4 buns *(Dave's Killer Bread 21 Whole Grains)

salt & pepper TT *(Steak seasoning)

2 TBS liquid smoke (optional)

Toppings (optional)

*Fried Onion Strings and Avocado Fries

1 sweet yellow onion

1 1/12 C. Cashew Milk (any nut milk will do)

1 TBS Apple Cider Vinegar (ACV)

Vegetable oil (enough to cover onions)

1 cup Flour 

1/2 cup corn starch 

1 tsp salt 

1 tsp pepper

1 tsp cayenne 

1 tsp garlic pwdr 

2 avocados barely ripe 

 

Directions: make your onions first...Open and drain the can of jackfruit and place in a medium pot. Add the bbq sauce & the liquid smoke at least covering the jackfruit completely, but depending on how messy you like your bbq. if you really want to get fancy you can make your own marinade and sauce, find that on my coming soon saucy blog. Make sure the jackfruit is well coated and bring to a very low simmer. Put a lid on it and let it chill while you get your onions ready. (if you're not making onions scroll through some dope videos HERE while you wait about 20 minutes). The Jackfruit should pull apart fairly easily with two forks when it is about ready. Shred it in the pot, add a little more sauce if you need to, and let it simmer about 10 more minutes. whaaalaa it's ready now get your buns toasty and add whatever fixins' you would normally eat on a pulled pork or bbq chicken sandwich, but they are homies now so it will taste way better on the jackfruit! 

 

Crockpot Directions: Double or triple the recipe and make sure there is enough bbq sauce that it won't burn, turn on low for 2+ hours. 

Onion Strings/Avacado Fries: mix the *cashew milk and ACV in a bowl and set aside. Peel your onion and slice as thin as you can get it. Submerge your onions in the Milk mixture and set aside (you can do this up to an hour before, the longer they soak the better). Now go start the JF while these babies soak. Once your JF is cooking and self sufficient for a few come back to the onions..... are you back? ok bet. Add the oil to a small pot with high sides, heat on medium high. ( your oil is ready when some flour sizzles in it) Mix your flour, corn starch, and seasonings in a bowl or on a plate, you're going to be coating the onions with it so use what you need to do that. Do this is in 2 to 3 small batches. Grab a fork full of onions and let the excess drip off for a second then dredge it in the flour mixture (make sure they are completely coated). Drop the onions in the hot oil and stir around a bit with a metal spoon to prevent them from sticking together. After 2 - 3 minutes remove from oil and place on paper towel lined plate. When you are ready to do the avocados slice them and immediately  dip in the milk mixture and then into the flour and then into the oil to prevent it from turning brown. BOOM now your JF is probably ready and you have a bomb ass sandwich that looks like it was really hard to make! 

*What I used, there are plenty of alternatives out there. 

Any nut milk will be fine, however Almond and Coconut milk tend to have a prominent taste.
